Instructions
Prep Your Lemongrass: Begin by thoroughly washing your fresh lemongrass under running water. If using stalks, you may peel off the outermost layer. Cut the lemongrass into small pieces using sharp scissors or a knife.
Boil The Water: Bring the water to a boil over high heat in a medium saucepan.
Infuse The Lemongrass: Add the chopped lemongrass (and ginger if you’re using it) to the boiling water. If you prefer a strong lemongrass flavor, boil rapidly for about 5 minutes before reducing the heat. Add the lemongrass to already boiling water for a milder taste and simmer for about 5 minutes.
Simmer: Cover the pot and let it simmer for an additional 5 minutes to allow the flavors to infuse thoroughly.
Strain And Serve: Strain the tea using a fine tea strainer to remove all pieces of lemongrass (and ginger).
Sweeten And Enhance: Add honey or your preferred sweetener to taste. A squeeze of lime juice can be a great addition for an extra kick.
