Ingredients
  

  • Black tea 2 bags or 2 tablespoons of loose leaf
  • Water 1 cup for brewing tea
  • Tapioca pearls 1/2 cup
  • Brown sugar 1/4 cup for syrup, plus 2 tablespoons for pearls
  • Milk or a non-dairy alternative 1 cup
  • Ice cubes optional

Instructions
 

Step 1: Brew The Tea

  • In a medium saucepan, boil one cup of water.
  • Add the black tea and allow it to steep for 3-5 minutes, depending on how strongly you like it.
  • Remove the tea bags, strain the loose leaves, and set the brewed tea aside to cool.

Step 2: Prepare The Tapioca Pearls

  • Cook the tapioca pearls according to the package instructions. Typically, this involves boiling them for 5-10 minutes until they are soft and chewy.
  • In a separate saucepan, dissolve 2 tablespoons of brown sugar into a small amount of water over low heat to create a simple syrup.
  • Once the pearls are cooked, drain them and mix them with the simple syrup. Set aside.

Step 3: Create The Tiger Stripes

  • Combine 1/4 cup of brown sugar with a small amount of water in the same saucepan used for the simple syrup. Cook over medium heat until the mixture thickens into a caramel-like syrup.
  • Drizzle this syrup along the sides of your serving glass to create the “tiger stripes.”

Step 4: Assemble The Drink

  • Add the sweetened tapioca pearls to the bottom of the glass.
  • Fill the glass with ice cubes to your liking.
  • Pour the cooled tea into the glass, leaving some room for the milk.
  • Slowly add the milk to create a beautiful layer on top of the tea.
  • Stir well before drinking to combine all the flavors.
